Spicy Pineapple Margarita Mocktail

Ingredients
  

  • 1/2 Fresh Pineapple (to yield about 1 cup juice)
  • 1/2 cup Coconut Water (or sparkling water for fizz)
  • 2 tbsp Fresh Lime Juice (about 1 lime)
  • 2 tsp Agave (optional, for sweetness)
  • Ice for serving)
  • Pineapple & Lime Wedges (for garnish)
  • Spicy Coconut Salt (for the rim—see recipe below)

Instructions
 

Step 1 : Juice Your Pineapple

  • Prepare the pineapple: Remove the top and bottom of the pineapple, then slice off the skin. Cut the flesh into chunks, discarding the core.
  • Juicer Method: Add pineapple chunks to your juicer and extract the juice. Strain if needed for a smoother texture.
  • Blender Method (if no juicer): Blend the pineapple chunks until smooth, then strain through a fine mesh sieve or cheesecloth to remove the pulp.
  • Measure the juice: You should have about 1 cup of fresh pineapple juice.

Step 2: Rim the Glasses

  • Run a lime wedge around the rim of each glass.
  • Dip into Spicy Coconut Chili Salt (recipe below).

Step 3: Make the Drink

  • Muddle the jalapeños with lime juice and agave in a shaker to release the spice.
  • Add the fresh pineapple juice and coconut water to the shaker. Shake well.
  • Strain out the jalapeño slices (or leave them in for extra spice!) and pour over ice in the prepared glasses.

Step 4: Garnish & Enjoy

  • Add a pineapple wedge or lime slice for the perfect tropical touch.
  • Sip & enjoy the island vibes!
